My kitchen has fewer things in it and more room to cook. That was the trade.
One good pan instead of five that were each perfect for one specific thing I never made.
Counter space I can actually put a cutting board on without moving three appliances first.
And I cook more now, not less. Fewer tools somehow made it easier to start.
